Handcrafted, Not Mass Produced: Why Our Pastries Are Different

In a world of mass production and conveyor belts, it’s easy to forget what food is supposed to feel like.

At Monika’s Potica, we do things differently. Slower. More personally. More… human.

    Walnut Roll

We don’t have machines that portion dough. We don’t use industrial ovens or chemical preservatives. What we do have: floured aprons, quiet mornings, the smell of toasted walnuts, and a stubborn commitment to tradition.

Because some things just taste better when they’re made by hand.

🖐️ The slow way is the good way

We make each potica from scratch — starting with dough that’s mixed by hand, left to rise naturally, and rolled out until it’s almost translucent.
Then comes the filling: walnuts roasted and ground the same day, poppy seeds gently cooked into a fragrant paste, chocolate melted slowly and stirred until smooth.

Nothing comes from a factory. Nothing is rushed.

“There’s no shortcut for real flavour,” says Monika. “You can’t fake love in baking.”

    🥣 Ingredients matter

We don’t believe in “just good enough.” We believe in real. That’s why our ingredients are:

    • Locally sourced whenever possible
    • Completely natural (no E-numbers here)
    • Measured by hand, not by machine
    • Packed with flavour, not with fillers

We use organic eggs, stone-milled flour, real cocoa, and British dairy. Our nuts? We roast them ourselves. Our jam? We stir it with a wooden spoon.

Yes, it takes more time. But we’re not here to make fast food. We’re here to make memories.

✨ Every roll tells a story

Each potica is different — slightly imperfect, beautifully unique. Some have a tighter swirl. Some have a crispier edge. But they all carry the same secret ingredient: care.

When you slice into one of our poticas, you’re not just getting a dessert. You’re getting a tradition, a quiet moment in the kitchen, a piece of someone’s past — passed into your present.

This isn’t just pastry. It’s culture you can eat.

  • Monika’s Potica: Born from a Kick, Baked with Love

Monika’s Potica: Born from a Kick, Baked with Love

Let’s set the record straight: Monika didn’t dream of becoming a baker. She didn’t wake up one morning thinking, “You know what the world needs? Another potica.” No. As she tells it, she started baking because her husband (and now business partner) Leon gave her a not-so-subtle nudge. “I had to. Under pressure. That’s how it started,” she laughs.

But don’t let that fool you. What began as a reluctant task quickly turned into a deeply personal mission to bring the taste of Slovenia to kitchens across the UK. Today, Monika’s Potica offers traditional Slovenian rolls – each hand-rolled, filled with rich homemade fillings, and baked to perfection.

    A childhood baked in tradition

Monika grew up surrounded by flour, walnuts, and the smell of rising dough. “My mother baked every Sunday. That was just what you did,” she says. Later, she polished her skills at the Biotechnical Educational Centre in Ljubljana. But still – baking wasn’t the plan. It just… happened. “One day I was helping with the filling. Then suddenly, I was baking the whole thing myself.”

All by hand – because machines don’t understand potica

Ask her what makes her potica special, and she doesn’t hesitate: “Everything is handmade. No mixers, no shortcuts.”

The dough is kneaded with care. The fillings are cooked fresh. Each roll is filled, shaped, and baked by hand. “It’s a mess,” Monika says with a grin. “But it’s our mess.”

    Favourites, flavours and flour fights

Monika offers six flavours: walnut, hazelnut, poppy seed, coconut, chocolate, and her personal favourite – the elegant, layered Potratna potica.

The bestseller? Walnut. “Everyone knows it. It’s like your grandma’s hug in cake form.”

    What’s it all for?

For Monika, it’s not about mass production. It’s about home. “I want people to open the box and feel like someone baked this just for them – because I did.”

And who are those people? Mostly Slovenians living abroad, craving something familiar. But more and more Brits are discovering potica and falling in love with it.

    From pressure to passion

Monika started under pressure. But today, her passion is real. Her poticas are little spirals of love, tradition, and stubbornness – just like she is.

So the next time you bite into a slice of walnut potica, remember: this story started with a kick, a sigh, and a whole lot of flour.
