Monika’s Potica: Born from a Kick, Baked with Love

Let’s set the record straight: Monika didn’t dream of becoming a baker. She didn’t wake up one morning thinking, “You know what the world needs? Another potica.” No. As she tells it, she started baking because her husband (and now business partner) Leon gave her a not-so-subtle nudge. “I had to. Under pressure. That’s how it started,” she laughs.
But don’t let that fool you. What began as a reluctant task quickly turned into a deeply personal mission to bring the taste of Slovenia to kitchens across the UK. Today, Monika’s Potica offers traditional Slovenian rolls – each hand-rolled, filled with rich homemade fillings, and baked to perfection.
A childhood baked in tradition
Monika grew up surrounded by flour, walnuts, and the smell of rising dough. “My mother baked every Sunday. That was just what you did,” she says. Later, she polished her skills at the Biotechnical Educational Centre in Ljubljana. But still – baking wasn’t the plan. It just… happened. “One day I was helping with the filling. Then suddenly, I was baking the whole thing myself.”
All by hand – because machines don’t understand potica
Ask her what makes her potica special, and she doesn’t hesitate: “Everything is handmade. No mixers, no shortcuts.”
The dough is kneaded with care. The fillings are cooked fresh. Each roll is filled, shaped, and baked by hand. “It’s a mess,” Monika says with a grin. “But it’s our mess.”

Favourites, flavours and flour fights
Monika offers six flavours: walnut, hazelnut, poppy seed, coconut, chocolate, and her personal favourite – the elegant, layered Potratna potica.
The bestseller? Walnut. “Everyone knows it. It’s like your grandma’s hug in cake form.”
What’s it all for?
For Monika, it’s not about mass production. It’s about home. “I want people to open the box and feel like someone baked this just for them – because I did.”
And who are those people? Mostly Slovenians living abroad, craving something familiar. But more and more Brits are discovering potica and falling in love with it.
From pressure to passion
Monika started under pressure. But today, her passion is real. Her poticas are little spirals of love, tradition, and stubbornness – just like she is.

So the next time you bite into a slice of walnut potica, remember: this story started with a kick, a sigh, and a whole lot of flour.
